Thin and parisian galettes

Ingredients

  • Flour: 1000g

  • Concentrated butter: 600 à 700g

  • Caster sugar: 750g

  • Sachets of vanillin sugar: 2

  • Eggs: 8

  • A pinch of salt: 1

  • Cup milk: ½

Preparation

  • Step 1

    Separate the egg whites from the yolks and beat the egg whites until stiff.

  • Step 2

    Blend the butter, sugar, flavouring and egg yolks.

  • Step 3

    Sift and incorporate the flour into the mixture as well as the beaten egg whites.

  • Step 4

    Leave the batter to rest in the fridge for a few hours.

  • Step 5

    Make small balls of batter about the size of a walnut.

Baking

  • Preheat the waffle iron for about 15 minutes.

  • The cooking temperature should be ± 180° = Position 6
