Thin and parisian galettes
Ingredients

Flour: 1000g

Concentrated butter: 600 à 700g

Caster sugar: 750g

Sachets of vanillin sugar: 2

Eggs: 8

A pinch of salt: 1

Cup milk: ½
Preparation

Step 1
Separate the egg whites from the yolks and beat the egg whites until stiff.

Step 2
Blend the butter, sugar, flavouring and egg yolks.

Step 3
Sift and incorporate the flour into the mixture as well as the beaten egg whites.

Step 4
Leave the batter to rest in the fridge for a few hours.

Step 5
Make small balls of batter about the size of a walnut.
Baking

Preheat the waffle iron for about 15 minutes.

The cooking temperature should be ± 180° = Position 6
