Apple fruit filling for filled waffles

Gaufres aux fruits, avec des pommes.

Ingredients

  • Apples (peeled and diced): 500 g: 500g

  • Sugar: 100g

  • Water: 200ml

  • Cornstarch: 20g (+40ml water)

  • Optional - Vanilla or cinnamon powder: 1 pinch

Compote preparation

  • Step 1

    Peel the apples and cut them into small pieces.

  • Step 2

    In a saucepan, add the apples, sugar and 200 ml of water.

  • Step 3

    Cook over medium heat for about 8–10 minutes, depending on the desired texture.

  • Optional

    Add a pinch of cinnamon or vanilla during cooking.

Achieving the perfect texture

  • In a bowl, mix the cornstarch with 40 ml of water.
    Pour this mixture into the hot compote and bring to a high heat.
    Stir constantly until the liquid thickens and the filling becomes compact and smooth.
