Cherry fruit filling
Ingredients
Cherries (pitted): 500g
Cherry juice: 60ml
Sugar: 60g
Cornstarch: 15g
Optional - Ground cinnamon: 1 pinch
Preparation
Step 1
In a bowl, mix the sugar and cornstarch thoroughly.
Step 2
Add the cherry juice and whisk until smooth, with no lumps.
Step 3
Heat this mixture over high heat (or in the microwave) until it starts to boil.
Step 4
Pour the thickened syrup over the cherries and mix well to coat all the fruit.
For a fruitier texture, you can mash part of the cherries.Step 5
The result should be thick enough to hold together but not too liquid (to avoid leaking during baking) and not too firm to keep a pleasant texture.
Optional
Add a pinch of cinnamon for a delicate aroma.
