Savory Zucchini Parmesan Waffles with Smoked Salmon and Yogurt

Ingredients (8 savory waffles)

  • Flour: 140g

  • Dry yeast : 5g (½ packet)

  • Zucchini: 200g

  • Grated parmesan: 100g

  • Eggs: 3

  • Garlic: 1 clove

  • salt: 1 pinch

  • A few fresh basil leaves

  • Smoked salmon: 4 slices

  • Greek Yogurt: 150g

  • A few sprigs of fresh dill

  • A squeeze of lemon juice

Preparation

  • Step 1

    Cut the zucchini into slices and blend them with the garlic until roughly chopped. Keep small pieces for a better texture.

  • Step 2

    Add the flour, eggs, parmesan, yeast, salt and basil. Blend in short bursts to obtain a smooth but not liquid batter.

Baking

  • Preheat your AMPI waffle maker to around 180°C, lightly oil the plates and pour a small ladle of batter into each mould.
    Bake until the savoury waffles are golden and easy to release.

Serving savory waffles

Serve your warm savory waffles with a spoonful of Greek yogurt, a slice of smoked salmon, a dash of lemon juice and a little dill.

Chef's tip for savory waffles

You can prepare the savoury waffles in advance and reheat them for a few seconds in your AMPI waffle maker or toaster to bring back their crispiness.
