Brussels waffle
Ingredients (16 waffles)

Plain flour: 1000g

Softened butter: 400 g

Eggs: 8 à 10

Milk: 1,5 litre

Caster sugar (1 dessert spoon): 20 g

Powdered vanilla Or vanilla sugar: 0,5g / 30g

Fresh yeast: 50g
Preparation

Step 1
Dilute the fresh yeast in a little tepid milk with a little sugar.

Step 2
Put the flour into a bowl and make a well in the centre. Pour in the tepid milk and mix together well before adding the eggs yolks.

Step 3
Add the softened butter and then the yeast, followed by the beaten eggs whites.

Step 4
Leave the batter to rest for about 45 minutes.
Baking

Preheat the waffle iron for approximately 15 minutes to a cooking temperature of ± 200°, position 7.

Cover the entire batter mould and tip the waffle iron up. The batter must be smooth and runny like pancake mix.

Seal the waffle iron and turn over after a few seconds.

Do not open for 2 to 3 minutes

Normal cooking time: 3 to 4 minutes.
After baking
After cooking, cover the waffles with sugar or Chantilly cream, jam or fruit, according to taste.
