Brussels waffle
Ingredients (24 waffles)
Plain flour: 1000g
Butter: 400g
Eggs: 16
Milk: 1440ml
Vanilla sugar: 120g
Yeast - 2 options :
OPTION A (Baker's yeast) – With resting time : Fresh yeast (50g) OR dry yeast (17g)
OPTION B (Baking powder) - Without resting time : Baking powder (32g)
Preparation
Step 1
In a large bowl, mix the dry ingredients: flour, sugar and salt.
OPTION A – With dry yeast : mix the dry yeast with the dry ingredients.
OPTION B – With baking powder : mix the baking powder with the dry ingredients.Step 2
OPTION A – With fresh yeast
Crumble the fresh yeast and dissolve it in a small amount of lukewarm milk (taken from the total quantity). Add it in step 3 with the remaining milk.Step 3
Make a well in the center of the mixed dry ingredients and gradually pour in the milk while whisking until a smooth batter without lumps is obtained.
Step 4
Separate the egg whites from the yolks. Add the yolks to the batter in the large bowl and mix well.
Step 5
Add the melted butter and mix carefully until the batter is smooth and uniform.
Step 6
Beat the egg whites until stiff peaks form (in another bowl). Then gently fold them into the batter in several additions using a spatula.
RESTING TIME
OPTION A – BAKER’S YEAST : Let the batter rest for 45 to 60 minutes at room temperature, covered with a cloth or plastic wrap. The batter should rise.
OPTION B – BAKING POWDER : No resting time required.
Baking
Preheat the waffle iron for approximately 15 minutes
Cooking temperature : ± 200° (position 7)
Baking time : ± 3-4 minutes
Pour the batter onto the plates, filling the grids without overflowing
Close the waffle iron immediately
Rotate the waffle maker 180°
Bake until a nice golden-orange color is achieved
Remove the waffles using a waffle fork
Tips and recommendations
- Place the waffles on a cooling rack after baking. This allows air to circulate and keeps them crispy. Do not stack them while they are still hot.
- Dust with powdered sugar just before serving.
- Add toppings as desired: whipped cream, melted chocolate, fresh fruit, coulis, ice cream… The possibilities are many.
- For later consumption, reheat the waffles for a few minutes in a toaster or in a preheated oven at 180°C to restore their crispiness.
- The waffles can be frozen once cooled. Reheat directly without thawing for the best result.
