Preparing the dough
Using a mixer, start by combining the water, butter, yeast and waffle mix. Stir until the dough is perfectly homogeneous. (1 min slow speed + 6 min fast speed)
At the start of preparation, blend only the waffle mix and the salt, to avoid the yeast coming into direct contact with the salt. This prevents the salt from neutralizing the yeast’s fermentation properties. -
Divide and form dough pieces
Next, divide the batter into portions of around 100 grams each.
If you’re using our waffle iron dedicated to Filled waffles ref. 52117, this is the recommended weight. -
Essential ferment phase
Leave the dough balls to rise until they double in size.
– Room temperature: +- 90min
– Fermentation chamber : +- 60 min. at 29°C, 85% relative humidity. -
Preparing the savory filling
Take advantage of the dough’s resting time to prepare your savory filling. Whether you opt for a delicious ham and cheese combination, vegetables, smoked salmon or other ingredients, the choice is yours.

Shaping waffles
After the fermentation phase, use a rolling pin to flatten each dough to the size of about 2 waffles.

Adding the filling
Place the salted mixture (about 100 grams) on one half of the waffle.

Hermetic seal
To keep your waffles perfectly sealed, moisten the edges with egg yolks, fold over the pastry case, then seal the edges by pressing all the way round.
Baking

Baking temperature : ± 180°C.

Baking time : ± 3-4 min

Cook your waffles in a pre-heated waffle iron until golden and soft. The cooking time may vary slightly depending on your waffle machine.
