It is designed to save time in daily production without requiring complex weighing, long preparation steps or multiple ingredients. Simply add water to the mix and prepare a fluid batter ready for baking.
The batter can also be prepared in advance and stored in the refrigerator, making it a practical solution for busy service periods, events, hotel breakfasts, dessert menus or takeaway sales.
A flexible base for your own waffle concept
This Brussels waffle premix gives professionals a reliable base while still allowing room for personalisation.
Depending on the desired texture, you can adapt the recipe by:
- adding 60 to 120 g of butter per kg of waffle mix to enrich the texture
- using 50% still water and 50% sparkling water for a lighter and crispier result
- adjusting the quantity of water between 800 ml and 1300 ml per kg of mix, depending on whether you want a thicker, softer waffle or a lighter, crispier one

Ingredients
- Brussels waffle mix : 1000 g
- Water : +/- 1100 ml
Preparation
Mix the ingredients for 2 minutes until you obtain a liquid and fluid liquid dough.
Let the dough rest for 5-10 minutes for fermentation.
Cooking
- Preheat the Brussels waffle iron
- Recommended baking temperature : +- 200°C.
- Cooking time : +- 2min30
- When the waffle iron reaches the recommended temperature, pour the liquid dough onto one of the baking plates and filling the entire baking cones.
- Close the waffle iron and immediately rotate the appliance by 180°.
- Bake for 2 minutes 30.
- Remove the waffles with a waffle fork.
