Ingredients
- Filled waffle mix: 1000g
- Butter: 300g
- Fresh Yeast: 50g(or dry yeast): 15g
- Water: 375ml
Preparation
Preparation of the dough
Start by combining the water, butter, yeast and waffle mix. Stir until the batter is perfectly smooth. (1 min low speed + 6 min high speed)
Divide and form dough pieces
Divide the dough into portions of around 100 grams each.

Essential Resting Phase
Allow the dough to ferment at room temperature for about 45 minutes. This stage is crucial for the development of the dough’s unique flavour.
Preparation of the fruits filling
Cut your fruit into small pieces, such as cherries, peaches or apples, according to your preference. Cook the pieces to make a sweet homemade compote. Then add potato (or corn) starch to make a smooth, consistent fruit paste.
Shaping the waffles
After the fermentation phase, use a rolling pin to flatten each dough to the size of about 2 waffles.
Adding the fruits filling
Place the fruits mixture (about 120 grams) on one half of the waffle.
Hermetic Sealing
To make sure your waffles stay perfectly sealed, seal the edges by pressing firmly all around.
Baking
- Baking temperature : ± 180°C.
- Baking time : ± 3-4 min
Bake your waffles in a pre-heated waffle iron until golden. The cooking time may vary slightly depending on your waffle iron.
